Something out of nothing

Tonight my very tired wife made a quite reasonable request: "can you make something sweet?" The answer to this question is always 'yes,' but sometimes it's harder than others. Tonight, for example, was tricky because we have no eggs in the house (nor much else I'd need to really make something awesome). Part of being a good cook and baker is being able to make something out of nothing, and so, I give you my mother-in-law's Oatmeal Squares:

Ingredients

  • 1/2 cup butter
  • 1/2 tsp Vanilla
  • 1 cup brown sugar
  • 2 cups rolled oats (large flake work, but smaller are better)
  • 1 tsp Baking Powder
    Mix the above and press firmly into an 8x8 baking pan (hard size to find these days, so double if you are using a larger pan).  Bake at 375 F until golden brown (10-15 mins).  Cut into squares while still warm (very important!).
