So hot you can't touch it

I do a mean paneed chicken and tonight I tried making a wild mushroom and white wine sauce to go over it.  I nailed it, and then re-learned the lesson I teach myself every time I do this.  I always sear off my chicken breasts and then finish them in the oven.  Well, can I ever remember that the pan is beyond hot when I take it out?  I was just deglazing the pan and I heard this ridiculous sizzling and couldn't figure out what I was burning in the pan--oh, right, my hand on the handle!
